Most of the carbohydrates in your diet are starches. Starches are long chains of glucose that are found in grains, potatoes and various foods. But not all of the starch you eat gets digested. Sometimes a small part of it passes through your digestive tract unchanged. In other words, it is resistant to digestion. This type of starch is called resistant starch, which functions kind of like soluble fiber. Many studies in humans show that resistant starch can have powerful health benefits. A natural or modified starch that is resistant to decomposition and hydrolysis. Today, the use of resistant starches as dietary fiber and their beneficial physiological effects and functional characteristics of different foods have become increasingly popular. The use of dietary fiber has beneficial effects on human health and the fight against obesity. Chances are the most important source of carbohydrates in the diet. A part of the starch is not digested by the enzymes present in the gastrointestinal tract, which is referred to as resistant starch. Fibrous starch is found in cereals, potatoes, peas and bananas. So far, many studies have been done on resistant starch in the world and there are many findings about it. The benefits of this substance are in the way of digestion, resistant starch passes through the small intestine and is metabolized in the large cortex. Then, it is fermented and converted into a short chain fatty acid that generates energy. Short chain fatty acids act as useful prebiotics for the digestive system and reduce the risk of diseases such as diabetes and heart problems. Full grains are excellent sources of starchy and can play a very important role in our overall health. Full grains not only help in weight loss but also significantly reduce the risk of chronic diseases such as colon cancer, heart disease and type 2 diabetes. Studies in humans have shown that digestible starch can have many health benefits, including improved insulin sensitivity, reduced blood glucose levels, decreased appetite and various benefits for digestion. In this paper, we will look at the studies conducted in this field.
